You can’t bullshit with food. It deals with ingredients, a sense of place, economy, and being able to use things in a good way. It gives me a sense of inspiration that there’s a new aesthetic. There’s something kind of messy, something kind of casual. It’s a sort-of aesthetic. It’s now called a relative aesthetic, or whatever. Architecture should be like that too. We can’t be that cold and rigid. We have to be part of the organic, living culture that we live in. I use food as a way to free people up, to get them away from thinking of architecture as a rigid developer-oriented or institutionalized field.
